I know, right?! I got my wife the carbon Royce Union with SLX for under $300 shipped. I'd probably trust the integrity/strength of their aluminum frame more but she loves the looks of it.

It's nice keeping the cheapo gravel bike at the office for impromptu rides or lunch runs.

Picture is worth more than a thousand words. Swap the handlebar and it looks every bit like a top bike from 10 years ago.

Report back on the ride quality. My buddy got the 500 bucks Walmart carbon bike. The devil is in the details, works great as is, but once he started upgrading, he ran into some built quality and fit issues.
 
For the mtn bike, I would recommend Medium but it looks like that one isn't in stock any more. The M/L that they have listed fits me perfectly at 5'11" with seat up high. With a 50mm stem and the seat lower it'd fit you fine.
I'm 6" 33.5" inseam and typically have to max out the seatpost height on 19" 26inch wheel bikes (which I don't like)
My previous bike that got stolen was from Giant, 26 wheels, 23" frame size XXL (I got it used). The only issues I had with that bike was that the handbar was a bit far, and I would have to crane my neck up to see the road (I wear glasses so that did not help) other than that no other issues. Even though the frame size was 23" I still had to raise the seatpost up a couple of inches (it was great to not max out the seatpost height).

I'm thinking of getting the RHT for commuting.
Would the 21 be too big for me?
I typically prefer a more upright position, and I'm thinking with a stem riser like amazon.com/dp/B09C4JFPJY I could shorten the distance to the handlebars?
Would a larger size help with my neck craning issue as I would not have to raise the seatpost as much?

Is the RHT still in production?

Yes on the bike size, no on the stem.
I would do a higher riser bar instead. Try something with 50mm rise. Also, get a shorter stem. 35 to 50mm length.

Personal preferences. YMMv.
 
My issue is the pivot link of the stem. You can tighten them all you want, but at the wrong time under the wrong situation, that comes slight loose and you are going to say oh sh*t very fast.

Why do you need an adjustable stem? They do make fixed high rise stems. Years ago I got one from Thompson that has some ridiculous rise much like the stem in your image, just the height can’t be adjusted.

Yes, I do not need an adjustable step. I'll search for a fixed high rise one,
