Which rotor configuration is best for my situation?

I'm about to order a pair of Formula K18's. The only thing holding me up is the rotor configuration. It seems I am unable to make up my mind between the poll choices because I simply don't have enough experience.

The brakes are for a 2005 Schwinn Rocket Pro with a 2005 Marzocchi All Mountain 1. I need the brakes to handle long and very steep descents, and since I'm larger than the average person (safely in Clydesdale territory), brake fade and strength are major concerns. I still want decent modulation and I don't want more brake than my fork (which is rated for 8 inch rotors) and frame (no idea if this is an issue or not) can handle.

I've also read a post or two about larger rotors nailing obstacles (such as curbs), is this really an issue?

Any insight is greatly appreciated!!
