Chiquito is always fun, beautiful, and challenging (it's climbable, but it's an easy shuttle from Blue Jay to the candy store).

Noble Canyon is fairly epic if done as a loop.

If you haven't ridden Idyllwild, you should.

Okay, can't do just 3...so I'll throw in Cannell and SART.

Having said that, I'd prefer a bunch of trails along the Norcal coast, Tahoe/D'ville, or in Oregon/Washington. Where you moving to?

Chantry Flat/Winter Creek/Mt. Zion/Gabrielino: One of the most unique rides in SoCal.

Cannel Plunge (Kernville)

And then maybe an afternoon of shuttling McGill (OK, ride up once just to say you did).

My top 3 are (not in any particular order):

Big Bear: Hanna Flat/Grays Peak/Exploration
Kanan Backbone: Sections 1,2, and 3 going East
Big Sycamore: Backbone/Guadalasca/Sin Nombre-Two Foxes
Chantry Flats: Upper Winter/Mt. Zion/Sturtevant
GMR: Lower Monroe Truck Trail
Chesebro: Fireroad/China Flats/Sheep Corral
Los Robles: West
Wildwood Park: Whole thing
South Mtn, AZ: Desert Classic
San Luis Obispo: MdO/Irish Hills/West Cuesta/Morro Bay
Strawberry Peak (R.I.P.) Boo-hoo-hoo, all gone!
Dirt Mulholland: Caballero/Fireroad/Bent Arrow

Ooops, That's one too many to offer, SORRY!

in general any trail that is not overrun by SHUTTLERS. wussies. no respect for hard work.
santa ana river was fun.
noble canyon is cool, but the paved climb isn't really worth it - maybe riding up the single track is more fun.
local SD trails are just for workin out, nothing more. nothin to write home about.
maybe a plug for the as of yet unridden for me cannel plunge. does that count?
