look at a rim. if there's a circle of metal around each hole, that's the eyelets. that circle of metal extends into the rim and the spoke nipple seats against it, rather than directly against the rim material. if there's no circle of metal, and just a hole drilled in the rim material, that's a rim without eyelets.
either style works. most builders will tell you they prefer building rims with eyelets because the nipples seem to turn a tad smoother during final tensioning.
rims without eyelets, at least the good ones, tend to have more aluminum in the spoke bed. rims with eyelets can get away with a thinner spoke bed because of the extra reinforcement of the eyelets. that said, most of the rims I've ridden that eventually cracked at the spoke holes had eyelets.

Most rims have eyelets. Eyelets are the steel rings around the holes to even distribute the spoke tension around the hole. Single eyelets only go around the exterior hole and double eyelets go around the exterior hole and extend up around the interior hole.

Thanks for the info so far. For XC/urban riding, given the choice between eyeletted and non-eyeletted rims, will the eyeletted rims generally be better quality and stand up better? I think some rims come in eyeletted and non-eyeletted - are the eyeletted ones generally more expensive and better?
