A 29" tire size 2.2 (IRC MYTHOS for example) is equivalent to what size 700c tire?
700 x 45 ?
Also I am considering a 700 X 40 cyclocross tire for my Fisher, can a Bontrager Race rim accept this size tire? How narrow of a 700c tire can this rim accept?
Thanks.

Simple. "700c" tires are measured in millimeters, "29 inch" tires are measured in inches. There are 25.4 millimeters to an inch, so a 29x2.2 tire is equivalent to 700x56.

Just about any 700c/29" rim should be able to accept a 700x40 tire without any problem.

You can easily run a 28 mm tire on your wheels.

What is the absolute biggest Cross tire available? I'm looking for a tire that would be about a 1.7 or 1.8 if it were a true Mtn Bike tire....but seeing as I'm unaware of any skinny mtb tires, i figure going for the hugest cross tire might the deal...just don't know which tire that might be....

Cross tires

I've run Ritchey Mountain Cross tires that are 700c/45 . I recall that Tufo has some equivelant 40+ tires as well. The Ritchey tire is extremely low profile so don't expect the same plush ride that say a Notos or Kenda will give you.

Seen this week again on a bike in a shop : Schwalbe Black Jack 700x47mm.Looks like a true 1.8 at least. Not light though, as it's only available in steel bead and cheap compound.

I may try both the Schwalbe Black Jack and WTB Mutano raptor to see which I like best. I will probably go with the WTB first as I want this for a race tire.
