brewdog - thats what we've been explaining. If you have both a lever and caliper with different fittings, no problem. If no fittings are available for a specific type of hose, thats the problem. If the hose diameter is universal and the fittings are for different size/ type hoses, then your basically screwed unless you own a machine shop or know how to jerry-rig a working fitting assembly.
As for absolute universal compatibility, the only lever/ caliper combo that may have compatibility issues with interchange are the Grimeca/Shimano XT BR-M755 4-Piston calipers. These were not produced by Shimano but rather, purchased in bulk from Grimeca and modified for use with mineral oil. I haven't had a chance to test this myself, but I believe that the BR-M755 System is on a different branch of the Shimano family tree.
(BR-M755's are awesome BTW.)
Edit: Now that I think about it, just ONE hose won't work. You need extra fittings, or the other hose with the fittings in order to have a compatible lever/caliper set.
