One thing to consider with going electric is allows you to get the same workout while going much further doing it. If your only purpose is a work out, then definitely don't get an electric. But if it's to get a workout and explore, then you should absolutely consider an electric bike.
What about the cost of an e-bike? Have you considered the OP's budget in your suggestion?

Out of interest, have you ever had to get to your FAK so quickly that you couldn't stop to take it out of a pack/frame bag? I always carry a FAK when I ride, but I've never felt like it needs to be deployable within seconds.
My daughter's EpiPen is in there.
 
Yeah you have to ask yourself what you’re trying to gain . If it’s mostly weight then it’s probably not going to be worthwhile.
I've found the Fiesta El Diablo Platter to be good for gaining weight.
 
I played the frame swap game before due to a broken frame. By the time I got everything I needed for the "new" bike I would have been better off buying a complete. (2007 gary fisher cobia --> 2018 soma double cross) While most of my pain was due to going from flat bars to drop bars. I also know low end bikes (including name brand bike shop bikes) will sometimes cut corners in weird places.

Places I would check to see if standards match:
bottom bracket width (may be less important if square taper
hub standard (front and rear) (I have seen boost rear and non boost front, weird quick release standard rears)
fork steerer tube (tapered vs straight, will the length work)
seat post diameter (there are a ton of standards that are silly close to each other)
rear brake mount (should be fixable with an adapter)
