I'm doing a drop bar MTB with 36" wheels, so I need a 51t cassette compatible with drop bar shifters.

What's a shifter derailleur combo that works?
Are you running 1x or 2x? I run Di2 with GRX ST-RX815 shifters and an XT RD-M8050 RD. That RD has a mid cage. It might work with an 11-51 in 1x with no modifications. I run 2x so I replaced the mid cage with a long cage from an XT 8000 RD and an 11-51 cassette and it works well.

If you are running 1x and don't want to run Di2, you could use any Shimano mechanical road/gravel brifters and a Tanpan with any of the new 11 or 12 speed RD's (6100, 7100, 8100 or 9100)

I'm planning to run a 64mm bcd 20T on a 24mm spindle crank, 11 speed, 11-51t hg cassette. Di2's not in the budget. I didn't know about the existence of the tanpan, thanks.
 
What would you buy if you were starting from scratch?
I was starting from scratch and I chose the Force shifters with the Ratio hack, the single ring Force crank running a Wolf Tooth 40, an X0 10/52 cassette, and an X0 MTB Derailleur with the Ratio hack. I ride steep and chunky fire roads and single track with Diverge, so I also opted for the Hope RX4 4 pot calipers front and rear. This set up is perfect for a dirt first gravel bike that has to run on the road to get to the dirt. The gearing will handle 20+ percent grades with relative ease, but will spin out at about 30mph. It might be time for me to go to a 42 up front.
 
I have the same setup on 2 bikes. 11-51 HG cassette (11-speed Deore, CS-M5100-11), 11-speed Deore derailleur (RD-M5100), and Microshift brifters (SB-M110). The only two drawbacks are: mechanical brakes only and the shifter cable comes out the side of the right brifter (non-aero).

What's your budget for shifters, RD, and cassette and are you using rim brakes or discs?
Budget: Dangerously, there is not really a budget. I set myself $3k as a build limit when I decided to buy instead of building a frame. With the 36er frame, fork, and wheelset I left that number in the dust already. So... As little as I can get away with but not so little that the bike sucks? I mean, this is for a bike that makes no practical sense.

Brakes: the plan was hydraulic disc brakes with big rotors to cope with the lost leverage of the 36" wheels.

Looks like all of the "mullet" intended solutions from manufacturers are going to be either way more than I want to spend, or no hydraulic brake option. The ratio hack looks like what I want.

Any gotchas on cheaper hydraulic brake brifter options that I should look out for, for an off road bike?
