I've been riding XT brakes for years but I'm looking for something new. I've read great things about the Formula Cura so ordered a set today but was wondering if anyone knows if you can use Shimano mineral oil with the Cura. I've got a lot left and would prefer to use it if it is compatible.

This question comes up from time to time between Magura and Shimano. Most agree that if the choice is to be stranded vs using a different mineral oil, they would use the different mineral oil. If I were in your shoes, id just give my oil to someone with the brakes it was meant for and get the oil I need.
 
Yep. I used to buy Magura oil because it was considerably cheaper than Shimano and then the guys at the bike shop figured out what I was up to and turned me on to the big bottle of Shimano oil which for some reason only costs a little more than the little single servings.

I'd buy the oil from the same company as the brakes. Who knows what additives, if any are in there that's compatible with their seals.
