It really depends on the tire size to some degree and the level of protection you desire. Many XC guys like myself will use a 2 ounces on a 2.0 to 2.2" 29er tire, but sometimes as much as 3 ounces for the initial setup. For a larger tire you may need more like 4 oz. Advantage of more sealant is it may last longer and offer better protection to a point, but the disadvantage for some is the additional weight of the sealant. Hope this helps...
 
4-6" ;) Seriously, if it's my setup, I'll just pour in until the liquid pool is about 4-6" long in the tyre and that normally equates to somewhere between 3-5oz, all depending on the size tyre and current temperature - right now it's so damn hot it's better to put more, helps keep it liquid longer. For others setups, I usually opt for a min of 3oz
 
4oz per tire, generally in a 29x2.25 or 2.4 tire.
I go heavy on the sealant. I've been bitten too many times as "too little, too late" going with less. Sure, it'd be nice to save 1.5-2 oz per wheel in rotating weight by going easy on the sealant, but then' I'd inevitably be tubing up trailside because it dried up or filled cactus holes at a faster rate than expected.

I personally use Serfas TireMedic, it works, it's cheap, always in stock at my favorite LBS and comes in 4oz bottles.
 
2oz for normal tires (2.1-2.4) and 4oz for fat tires (4.0-4.8)
