My Cannondale F-Si is XX1 gripshift (not a fan of GS, but that is a different story). There is never a time I need to dump more then a few gears at a time, and even then you are pushing your luck as you start to bind up. I have to twist slow as I continue to pedal. The closest I get to needing to dump is a crashing, but then the gear is the least of my concerns.

I commute to work, I never need to dump gears that fast.

With my Pinion gearbox I can dump 18 gears with a twist of the shifter, without pedalling. It definitely is faster to go from one end of the gear range to the other than my Di2 roadie.

I'm thinking that my next derailleur equipped bike will have XT Di2, set up 2x11. I still run a front derailleur on my regular bike because I get that fast, big ratio change with one click.
