The obvious difference is in the bearings. Sealed pedals used sealed type bearings and unsealed pedals use loose ball bearings. Pretty simple really.
I find that unsealed bearing pedals aren't as inferior as the price differential would suggest. And often enough they are as durable because the ball bearings are bigger than those found in sealed units. However maintenance is more of an issue with unsealed bearings, you have to grease them well regularly, plus also make sure that you don't lose any of the balls while you are doing it!! :(

I would if I knew how to open them, I dont see anyway this is possible

they are those gold magniesium specialized pedals...
 
I have found that most unsealed bearings are not properly tensioned thus leading to failure. Most unsealed bearings use an odd jamb nut assembly requiring some special wrench / sockets. I have been able to regrease my loose unit pedals but not adjust the bearing preload.
