If i'm in first gear and accidently try to upshift (into what would be gear zero), my derauiler will shift my chain upward and it will come off the first gear cog. Is there any reason it does this and any way to change it? The bike wouldn't do it when I had that plastic piece (chain guard or something)on there but I quickly bent it and it affected my shifting so I cut it out.

Your derailleur/shifters are misadjusted (at the least).

I have never seen a plastic guard between the smallest cog (what it usually called the 1st cog) and the dropout. Up shifting is moving the chain to a smaller cog (higher gear ratio).
