I have a set of XTR STI's (disc brake ones) that I got used. Unfortunately they have a lot of slop in the pivots, so much so that one has to move them a fair amount more to be able to shift.

Has anyone encountered this? Is there a way to fix this? Any help would be appreciated, thanks.

If they're like previous generation Shimano brifters, you're supposed to buy new ones Sorry, I couldn't resist. Maybe one of the guys with access to Shimano parts can advise...

Most XTR dual controls I've felt have a fair amount of slop in them. It seems that the LX and XT shifters are more precise.

You probably got one of the very early early generation 965's which were somewhat loose. After the first few months they made them a lot a lot firmer same as the LX/XT's. I got one of the first ones to come out that were the same. Later on I got another set for another bike which was clearly firmer. I found that while you can tell the difference testing the bike stationary, once you ride there is no real perceptible difference in feel or shifting.
