My backup wheelset is an XT set...I've never done anything to them...can someone point me towards a hub maintenance DIY for the XT hubs? What should be done to them and how to lube? Thanks.

While this article deals with older, lesser quality Shimano hubs, they both share the cup & cone configuration (as do all Shimano hubs I think) so your XT Wheelset should follow the same configuration hopefully:
