Does anyone put Shimano on a racer-x (pre carbon stays)? Do you have problems with the mech bumping into the chainstay and making it slightly difficult to shift into the higher gears?

I don't think you'll have problems shifting to higher gear. You possibly will get more chain slap with Shimano, but shifting should be fine with either mech.

SRAM looks better, works better, lasts longer -- if you're building up the frame, go for it; if it's a replacement, you have to match to the shifters or replace 'em.
