Hello!

I'd first start by looking at http://www.morcmtb.org to get an idea of what will be close to where you'll be (and, to see what is open for riding and is rideable). Outside of that, it may depend upon your skill level / preferences for riding. Leb is usually crowned the "premier" spot in Minneapolis and will most-likely have the largest amount of traffic; a good thing so that the trial is packed enough to ride. Murphy is great fun and, provided that it has been packed, would be an ideal spot for most any rider. The River Bottoms would be another likely spot (but I'm not a big fan of that trail -- personally, I prefer Murphy and Leb; that order).

We've got cold and snow, so, dress warmly!

Hey FarmerBEN -- have you ever made it to Levis Mounds (in WI)? That's some fun riding! For winter, however, I don't think that it's open to Mt. Bikes; to enjoy it, you'll need to break out the XC skis and/or snowshoes (stay off the tracked ski routes with the shoes). My riding buddies and I make that trek there (approx. 2.5 hrs away from Mpls.) 2 to 3 times a riding season. Great fun indeed...the trail stewards do a great job and are super nice. We had the good fortune to ride with 2 of the 4 the last time we were there (mid-fall).

Pisgah -- As Farmer suggests, you'll need to be a bit more specific on where you'll be to help narrow it down. There is riding all over the state for all types of riders/skill levels. For specific descriptions and locations, again, MORC is your best bet.

That was the one place on the list last year that I didn't make it to, hopefully I can get over there a couple times next summer it looks amazing.
