My favorite since I started riding has always been the tahoe rim trail from kingsbury summit to spooner summit.
Its 7 miles up (1300 or so vertical feet) and 6 miles down. Starts out with some technical climbing and then most of the way up is easy/moderate singletrack with some boulders and such to clear. You ride in the shade of pine trees, see stunning views of lake tahoe from on high, good traction, not heavily traveled but you'll see a few friendly people along the way.
Its pretty close to perfect.
