Maybe not Gunnar (My Steel Road Steed) but wouldn't Waterford be considered a custom Mfg ?

Gunnar Roadie huh? Me too! The bike rides great although I'm still not sold on the Profile SC fork. Even the Gunnar, while certainly not custom, is boutiquish so maybe this forum really should be small builders rather than custom. Just a thought.

you can get some customizations on a Gunnar

They'll do custom geometry, paint, and S&S couplers. At the time I got my Roadie, the 1-1/8 head tube was a customization. While it's not custom, I dig their color of the month program. I have a Roadie and a Crosshairs, both in COTM.

why wouldn't it be custom?

You have the option to get custom sizing, just like w/ independent fabrication, you can get stock sizes or custom.
