For a fork designed to work with cantilever brakes (Crosscheck steel) - I did fit V-brakes to it. How much more force on the fork do they really generate? WIll they tear it apart?

Same Q for an old frame with canti's in the rear. Though there I have put a booster on'em, so that should put stress of frame.

You should be just fine. V's are an easy swap for old-style cantilever, and the only possible problem I can think of is if it was one of the really early shock forks without the arch connecting the slides... which would be easily fixed with a booster. Be aware that canti levers will provide a lot more leverage than standard V levers, and you'll have to run the pads closer to the rim as a result.
