have new v-brakes on my Kona Unit, but am still using my old cantilever levers. They feel a little "squishy" when really pulling hard but seem to stop okay. Having no experience or way to compare, I am wondering if the levers made for the v - brakes would make the brakes more effective?

Yes. V-brake levers pull a different amount of cable than canti levers.
