What is the consensus for building 3-LED lights for road riding? 3 on one star or 3 separate stars? I'm liking the small footprint of using just one star and lens, but wonder if using just one limits the light pattern options too much.

You are absolutely right about limiting the light pattern options. The triple on one star is more compact but then a triple optic will have all 3 in a spot pattern, or all 3 in a medium pattern, or all three in a wide pattern. With individual stars you can mix up the optics to develop the light pattern you prefer.

Optics are cheap, buy a few of each beam shape. Build your housing so it is easy to swap optics. The beam pattern that looks good while you test it in the garage or backyard may not be the pattern you ultimately prefer.

IMO the benefit of doing a DIY light is that you can make it work how you like.
