I will install a deore XT hydraylic disc front (currently i have a mechanical disc) and also have tektro v-brakes on the rear wheel. They are ok, but on a bit of mud they squeal and don;t brake well then. I am thinking about buying a deore XT rear v-brake, Should I? I mean, is there a noticeable difference in braking? (are the XT's much better)? I have ZAC-19 rims and Rithey Z-max tires.

i am talking about rear brake. The rear xt v brake doesn't usually squeal...

I am running the Tektro Quartz MT10 vee brake on the back of XC bike and it has been a good brake. The stock pads suck though, put in some dual compound pads.

They feel as strong as the the Avid SD5 on my other bike. I think I saw these on Jensons for under 10 bucks.

Brake lever choice is important too. Get one with the leverage adjustment for my gusto, like the LX or Avid series.
