Yeah, I'm thinking either go wit an 11-42 cassette on the back with a 2x crankset or 11-46 cassette and a 1x setup... I just don't know how bad will be the jumps... I've been using that Tourney 3x since forever, what would you recommend?That should be fine. I think with 11 speed, you can pretty freely mix and match Shimano to your heart's content. I think the only thing to watch for is rear derailleur cage length.
Edit...I guess it has a little more complicated. There is a deore 11 speed 11-51 cassette. That one will need the correct derailleur and I don't think you can run that with 2x. But kinda outside the scope of your question.
I only have one bike for everything so.. I do commute on it, but just a few days a week so it's not that I'm going full Lance Armstrong on it... So I think it's a good plan to go with the 1x since I use it mostly for trails.I've found 1 x 11-46 more than enough for typical mtb riding. Are you often riding in the smallest ring and biggest cog or biggest ring and smallest cog? Unless you're commuting with the bike too and consistently riding more than 35 km/h (not just coasting down hills) 11-46 should be fine. The jump on the last 2 cogs, 37-46, is noticeable if i'm climbing steep terrain and need something between them but it's not a deal breaker for me.
I was however keen to throw away the front derailleur and a shifter which helps the decision
The Deore 11-51t 11 speed cassette works great with a Shimano 12 speed MTB rear derailleur and 11 speed shifter. I have this cassette, an XT 12 speed derailleur, and XT 11 speed shifter on my bike.That should be fine. I think with 11 speed, you can pretty freely mix and match Shimano to your heart's content.
