When do you replace your rotors, if you do? Ignoring the obvious: "when they are so out of true that you just can't true them anymore"

I wore down shimano xt pads front and back to the metal oops.

Took a bastard file cleaned them up put on new pads.

It took about 30 hard stops to set them and they are as good as new.

At least stopping power wise

Thats the truth. You know what's funny is that I've never had to replace a front rotor but have had to replace rear rotors. I figure it must because of the junk the front tire throws onto the rear and it gets in between the rotor and break pads. But my fronts just keep going no matter how hot I get them.
