Rockhopper disc to V-Brake conversion

I have a Rockhopper Comp that was built for disc brakes that I want to put v-brakes on. Front is no problem because the shock has threaded holes for cantilever bosses. The problem is the back. It doesn't have cantilever bosses or threaded holes on the back of the seatstays to thread cantilever bosses into. It does have a hole in whatever you call the horizontal tube between the seatstays (presumably for a caliper brake). It also has a threaded hole in the outside side of each of the seatstays at about the height (or maybe a little higher than) where I would put cantilever bosses. The holes have screws similar to bottle cage screws in them now. I'm guessing these are for a rack but who knows. My LBS said the only option was to get cantilever bosses welded/brazed on which I think is more trouble than its worth. Does anyone know of another option?

I can't imagine there being any other option. You'll have to stick to the disc on the back.

Any particular reason you want to get rid of the discs?
You can't get cantaliever bosses welded on an aluminum frame without getting the frame heat treated when you're done. WAY more trouble than its worth. No idea why you'd want to get rid of disk brakes, however. If they're not performing up to expectations, take it in and have it looked at. If you're trying to save weight, there are a lot of other places to save weight on that bike than by reducing your braking performance. The stock wheels are very heavy, I'd start there.

I bought the bare frame and am building it up. I have XT v-brakes and XT/517 rim-brake wheels sitting around. I'm not wild about spending a couple hundred bucks to get a setup that will be significantly heavier than what I can do for free. Sounds like that's what I've got to do though, at least on the back. Any reason not to run a back mechanical disc with a front v-brake?
If I had a choice I'd run it the other way around, since your front wheel has most of the braking power. Maybe you can sell the frame on ebay and buy something more in line with what you want to do.
