I recently dumped an ample glob of phil wood hub grease on my rotors repacking my hubs

I went to replace the pads and rotors with:

As a cheap temporary fix, however upon putting it all together the pads are rubbing on both sides of the rotor. Can someone please enlighten me as to what my problem is?

Try retracting the brake pads . The pistons may not be retracted all the way causing the pads to rub .

push the pistons back into the caliper. center caliper and pump the lever a few times with the wheel installed

Replacing a rotor for a glob of grease is silly. Just clean it, some isopropyl alcohol should work well. Pads might be a good move if you can't burn the contaminant off somehow. Is your rubbing constant with both sides? If it's just intermittent it could be you only need to true your rotor.

+1. Hot soapy water is adequate if you don't have Isopropynol; just make sure to rinse well with clean water.
