The chain that came on the bike is a KMC Z51 and after 200 miles it already has 1/16" stretch over 12". I have cleaned and lubricated it regularly, and rarely cross gears. What do you guys recommend for a more durable 7-speed chain?

Any good 8 speed chain will do. I've had good luck with the Sram PC870 (about $15-20).

About how many miles should I expect to get out of that chain?

Depends on your drivetrain condition and your riding conditions, very hard to put a number of miles on just about any mountain bike part.

I've actually had good luck with the Nashbar 7 speed chains. As long as you keep them clean, they last pretty good.
