I noticed that some bikes have two holes on the rear triangle of a full suspension frame. Why two holes? I was always curious but couldn't seem to get a reasonable good answer off Google.

If you're talking about the ones behind the seat tube it's usually to put a rack on.

If your talking about on the swing arm, a different mounting location can change the leverage ratio on the shock and alter the travel of the rear suspension.

I think I read somewhere that you can change the rear travel from 6 to 5?

Yes they are available on some bikes. A few highend offer the travel change like Intense or Titus to name a few, but most are lower end bikes aim to promote versatility most fail, too high shock ratio.

A few people I know who owns these kinds of bike do not change them, they may tried to satisfy the curiosity but usually leave in it's longest travel setting. I did with my Motolite but it was only a one time deal. Why carry the same weight and set the shortest travel.

Different bikes have options to change travel, geometry or leverage, but that depends on the frame.
