Stans, Goop, etc...are there any products that work for sealing tire punctures?

Are there any drawbacks to using products like these?

Also, what's a good lubrication spray to use for oil.
Of course, WD40 comes to mind, but it attracts dust.
I'm sure there's something out there made "just" for bikes.

you mean for lubing the chain? WD40 is awful as a lubricant...it removes grease...so if you use it around bearing and such you are only washing the grease away a little at a time...

depending on your riding conditions, you can go with wax based lubes for dry conditions...and for wetter conditions look for wet lubes like finishline.....

I'd suggest you go to your LBS and ask them what works best in your local conditions...they might point you in the right direction...
