I think (not positive) that to make anything carbon you have to have a mold. To the best of my logic it would be very un-cost affective to create a new mold for every frame. As opposed to a steel or titanium frame where the builder can manipulate the metal with more ease.

Scott and (presumably) Ibis are stock models only - no custom option as the OP was referring to. Trek Fuel is obviously another stock carbon FS option.

Before asking where the manufacturers are of custom carbon FS frames, I think you should ask how many will even do a custom alumninum frame. Ventana does it. I had my Yeti ASR-SL done with custom geometry for a small upcharge about 3 years ago, but I believe they have removed their custom option now.

Does anyone else know of options even for custom aluminum FS XC?

that I've found is Curtlo. You get a custom steel front triangle with any Ventana rear configuration for $1475. Doug does full sus 29'ers too.

Oooh, you mean custom custom. My bad. I'm not sure who does that kind of work.
I would think the different molds would make it super expensive to do such a thing.

I thought you were just looking for something a wee bit outside the norm.

You could try asking Trimble Cycles. They're plenty odd in look and design. Not sure if they will do custom work. Sycip on a small scale does some carbon work...might be able to do the custom al. work too.

there is/was a guy named alex ( i think) who made custom carbon FS stuff. buffalo composite designs. some cool looking, and apparantly well made and good riding stuff. website no longer around. not sure if he is still doing it.

he usd to hang around on the ridemonkey forums, i think. may be able to page him there.
do a search for the inedible. it's his big bike full susser. a few folks over there have them.
