Maxxlite 310 are good light and fast rolling tires for paved and hardpacked trails, just don't push them too far as the low knobs can let go kind of unexpectedly. The down side is the fact that they aren't cheap.

maxxis crossmarks are a good choice for your kind of riding if you want a fast rolling on and off-road tire. If you never plan on going off-road, a slick would be the fastest and have the least rolling resistance, I like the ritchey tom slick in the 1.4 inch size.

I do almost all my riding at Santos, just north of you, and would second the Maxxis Crossmark Exceptions as a great tire for our Florida trails. I have ridden on the road with them a couple of times when I couldn't make it to the trails and they are excellent XC tires for switching to the road every now and then. The fast rolling knob pattern makes for a very smooth ride on the pavement.
