I have a '00 Enduro Pro that I use as my backup bike when my current bike is in the shop. It came with a Manitou xVert and I believe it's either a 100mm or 110mm fork. Looking for something more plush. I'd like to upgrade to a longer fork if possible, but I'm not sure if that will screw up the geometry. As I said this is my backup bike, so I'm not concerned about having the latest fork.

you could try a fox talas, that way if the bigger suspension messes you up you can dial it down

I have the same frame (00 expert) and a Rockshox Pike set at about 120 -125mm travel works great.

I've never measured, but is the fork 1 1/8"?

Yeah, travel adjust can be really nice to set it up for uphill, downhill, DJ or whatever.
A Minute 1:00 ('05) can be dialled from 100-130mm. They happen to be dirt cheap right now too... ($200-$250, Jenson, Pricepoint, Greenfish, etc)
