I have a 1.95 and a 2.1 tyre. Both are new and have the same tread pattern.

Which one should I put on the front, which on the back?

I would defintely be putting the wider one on the front and the skinny one on the back. Reasons being, putting the skinny one on the back will give you more acceleration and the wider on the front will give you more shock absorbtion through your arms etc when you hit bumps with the greater air volume.

Ditto: recommend fatty up front.

Also look at the sidewall for a rotation arrow. Many manufacturers recommend reversing the tread direction depending on front or back use.

Motorcycles have a lot more power, obviously, so they run wider in the rear.

Unless you plan on doing some tractor pulls or drag racing on your bike, I would do what was mentioned above. I have run various setups with some kenda bgs/nevegals of different sizes and Contis vert/exp and I liked them all best rolling forward in the rear. Reversing tread in rear might help in sand or mud, but braking will decrease(from what I noticed) and it dog tracks a bit side to side in ruts.
