Is it possible to completely remove the brake levers and cables to just brake with pedals (kicking back on the pedals)? Do I need a whole new rear rim or some type of hub? Thanks for the help guys.

You'll need a new hub if you want to do this.

It's not something you'll see on a MTB very often and probably for a good reason.

The SS MTB will strictly be for sidewalks/cruising as I have another MTB for trails etc.

Then it's a 'cruiser conversion" and cruisers usually have coaster brakes, which are those "pedal back to stop" hubs you're thinking of and that are described in the link above. Go for it.
