Hi all, im gonna install xt brakes (M8100 lever and M8120 caliper). I bought them used, and the previous owner just removed them from a brand new bike. Shimano tech sheet and install tutorial i'm whatching says that the 8100 lever does not require the olive, just insert the hose into the threaded connector and tight it.
The thing is i found the olive in the hose, i asked the previous owner and he says the it was in place when he disassemled the brake. What do you think i have to do? use or not to use a new olive?

Use with the olive. Just reinstall with old olive. If it leaked then install with a "new" olive.

A new lever comes with a pre-installed olive so if it a new installation you only new to put the insert in the hose push the hose into the lever and tighten the screw. However, after this the olive is now connected to the hose. You will need a hose with an insert and olive if it is not a lever from out the box. If your hose already has the insert and olive you are good to go, no need to replace that.
