Low carb foods

I know we have Vegan/Vegetarian meals being posted almost daily. I though that since there are probably those who are not Vegan/Vegetarian.

Here is the start of some low carb meal options. This is all out of my recipe book.

Air Fryer Brussel Sprouts

Restaurant-style Brussel Sprouts made easy with the help of an air fryer! These sprouts are tender on the inside and perfectly crispy around the edges. They're delicious all on their own or topped with a drizzle of Spicy Mayo!

Yield : 6

Ingredients

1 pound brussel sprouts (about 4 cups)
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper


Spicy Mayo sauce

1/4 cup mayo
2 teaspoons sriracha
1 teaspoon honey
1/2 teaspoon sesame oil
2 tablespoons chopped pistachios or cashews
2 tablespoons minced cilantro


2-3 slices bacon, cooked and chopped up.


Recipe

Wash and trim brussel sprouts. Cut them in half lengthwise.

In a large mixing bowl, combine brussel sprouts, olive oil, salt & pepper.

Transfer to air fryer basket and shake to settle brussel sprouts into a single layer.

Set air fryer to 400° for 10-15 minutes, shaking every 5 minutes until crispy and browned.

Remove from air fryer and transfer to a serving dish.

Enjoy as is or top with sauce & garnishes.

Bacon and Cheddar Stuffed Mushrooms



Crimini mushrooms (also known as portabellini mushrooms) are stuffed with Cheddar cheese and bacon. This appetizer is an impressive and irresistible accompaniment to any meal.

Total : 30 min
Yield : 8 servings

Ingredients

3 slices bacon
8 crimini mushrooms
1 tablespoon butter
1 tablespoon chopped onion
¾ cup shredded Cheddar cheese

Recipe

Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, dice and set aside.

Preheat oven to 400 degrees F (200 degrees C).

Remove mushroom stems. Set aside caps. Chop the stems.

In a large saucepan over medium heat, melt the butter. Slowly cook and stir the chopped stems and onion until the onion is soft. Remove from heat.

In a medium bowl, stir together the mushroom stem mixture, bacon and 1/2 cup Cheddar. Mix well and scoop the mixture into the mushroom caps.

Bake in the preheated oven 15 minutes, or until the cheese has melted.

Remove the mushrooms from the oven, and sprinkle with the remaining cheese.

Bacon Wrapped Chicken Thighs

Bacon Wrapped Chicken Thighs cooked with brown sugar for that sweet and salty perfection. This chicken dinner cooks up in just 25 minutes!

Ingredients

6 boneless skinless chicken thighs
6 strips bacon
1/3 cup brown sugar
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon parsley (optional)
1/2 teaspoon garlic (optional)

Recipe

Preheat oven to 425 degrees F.

Mix the brown sugar, salt, and pepper together (also the parsley and garlic if you're using)

Start by seasoning the chicken with 1/4 of the brown sugar mixture.

Wrap the chicken up in the bacon.

Season the bacon wrapped chicken thighs with brown sugar, salt, and pepper.

Bake for about 25 minutes or until the internal temperature of the chicken thighs reaches 165 degrees F.

Ingredients

1 pound (453.59g) large shrimp (, peeled and deveined)
1 teaspoon (4g) Creole seasoning
4 tablespoons (56g) unsalted butter
1 tablespoon (8g) minced garlic
½ teaspoon (1g) paprika
1 teaspoon (0.80g) fresh thyme
1 teaspoon (0.80g) fresh oregano
Juice of ½ lemon or more to taste
½ cup (120ml) chicken stock
2 tablespoons (8g) chopped parsley
Salt and pepper to taste.

Recipe

Lightly season shrimp with salt and Creole seasoning.

Heat butter over medium heat in a medium skillet. Add the shrimp and sauté for about 3 -5 minutes each shrimp per side.

Throw in minced garlic, stir for about a minute or until fragrant.

Then add paprika, thyme, oregano, lemon juice, and chicken stock.

Bring it to a boil then simmer for about 2-3 minutes.

Add parsley and adjust for salt and pepper. Serve over pasta, rice, or vegetables.

Camembert Chicken

Chicken breasts topped with avocado and a yummy cheese sauce. This dish goes well with steamed fresh vegetables.

Preparation : 10
Cooking : 20
Total : 30 min
Yield : 3 servings

Ingredients

vegetable cooking spray
3 skinless, boneless chicken breast halves
2 tablespoons butter
1 ½ tablespoons all-purpose flour
1 green onion, chopped
¾ cup milk
1 tablespoon coarse grained prepared mustard
3 ounces Camembert cheese, cubed
1 avocado - peeled, pitted and sliced

Recipe

Spray a skillet with cooking spray, and place over medium heat. Fry chicken breasts in the skillet until cooked through, about 20 minutes.

While the chicken cooks, melt butter in a small skillet over medium heat, and stir in flour until smooth. Stir in green onion, and cook, stirring constantly, until the mixture starts to brown. Gradually mix in milk, and continue cooking and stirring until the sauce is thick and smooth. Remove from heat, and stir in the mustard and Camembert until melted and smooth.

Remove chicken to serving plates, and top with slices of avocado. Pour sauce over the chicken, and serve.

Most of these recipes are Keto style. I don't follow the Keto diet, just a low carb, well balanced diet, with minimal carbs.

My daily carb intake is between 30-40 grams of carbs per day.

These recipes help hit that goal.

This is a quick and easy spin on scrambled eggs. Ingredients can be prepared the night before to save time in the morning. A surefire hit back home and a much-loved addition to my husband's hit list!

1 tablespoon butter
½ cup diced onion
½ cup diced green bell pepper
½ cup sliced fresh mushrooms
½ cup diced bacon
4 eggs, lightly beaten

½ cup freshly grated Parmesan cheese
1 tablespoon ketchup

Recipe

Melt the butter over medium heat in a large skillet. Add the onion and bell pepper; cook and stir until the onion is transparent, 5 to 7 minutes. Stir in the mushrooms and bacon, and cook 2 minutes more. Remove skillet from heat, and place the vegetable-bacon mixture in a bowl.

Pour the eggs into the same skillet. Cook and stir gently just until the eggs are soft. Stir the vegetable-bacon mixture into the eggs. Season with salt and pepper. Cook the eggs until firm. Remove skillet from heat and stir in the tomato and cheese. If desired, stir in the ketchup.
