I have been riding for the last few years and never heard of or thought about removing the "Pie Plate" from behind the rear cogs.

Is this thing just simply crap to strip off like reflectors? What are the cons (if any) to doing this?

It's there to protect the driveside spokes if the rear derailleur is out of adjustment or bent and the chain gets thrown over the cassette.

If you keep your derailleur adjusted well (limit screw adjustment) and don't bend the derailleur or hanger, you don't need this.

If you're not the regular maintenance type or one to notice if you bend your derailleur or hanger it can save you from a costly wheel fix.
