I need to pick a saddle for my gf that is light and comfy. I think she probably wants an anitomical cutout... or at least a relief channel. Any suggestions? Cost on the saddle is the smallest concern.

I'll 2nd the Terry saddles. I'm a guy so I can't give a direct point of view, but I ride a Terry Fly Ti (245g) and love it. Pretty light but still has enough padding to be comfy.

They make a womans version, the Butterfly. Basically the same as the Fly, but a little wider. The Ti version is 262g. You can get it on sale for under $100.
