The stock pins that came on my pedals are 10mm long. While not the entire thread shows that is the default size. Will it be noticeable if I change the pin length to something longer? I bought some 12mm long pins but would like other people's feedback before I spend half an hour installing these.

Yes, I noticed a definite difference using 10mm vs 12mm. You may even end up playing with longer ones on the front/back and shorter in the middle of the pedal. The different sized pins give you lots more options for setup/feel.
