I have the TCS 123 TCS rims and am going to set them up tubeless. Should I go one wrap of tape or two?

I don't think wrapping more than once will provide any sort of benefit.

Assuming you are using UST tires, you don't need extra wraps in an effort to tighten up the bead. One wrap with it overlapped around the stem.

You only need one wrap on that rim.
Also, overlap away from the valve. I'm not sure where the overlap at the valve recommendation comes from, but it just invites more potential issues and there is no reason for it.
Notice how in the vid linked above Stan starts/ends his tape wrap at the seam (opposite the valve).
