In my local woods there are massive dirt jumps (at least from my point of view) that are 8 to 9 feet tall with 20 foot gaps in between. Some seem even larger.

Then there are little 1 foot high double jumps. That's where I'm at right now.

How do I learn to jump the big ones? And what kind of bike do I need? And how long will it take, my friends?

Work your way up slowly. Ask local riders where to find some jumps in between in size.

Bike selection varies. Dirt jump bikes are purpose-built for this, but people also use all-mountain, freeride and DH bikes. Depending on the type of transition, landing anything largish on a hardtail can be pretty brutal.

You could probably do it in a season if you practice a lot and miraculously don't break something.
