wich option would be more far away from the saddle?

45mm 0° Stem with flat bar 630mm width
45mm 0° Stem with 25mm riser 630mm width
70mm 12° Stem with flatbar 630mm width
70mm 12° Stem with 25mm riser 630mm width

a wider bar, like 760mm would be nearer or not?

A wider strait bar is the same distance to the saddle as a narrow bar, BUT if your grip is wider than your shoulder width, the wider bar will effectively make it feel like the bar is further away. But in inverse, depending on where the sweep begins, a wider bar may also bring your hands closer because of the greater length of back sweep.

You can figure out what the effective stem length (horizontal) with "simple" Trigonometry, here is a online calculator for you.

The answer would be 70mm 12* Stem with flatbar 630mm width
