Hi there,
Does anybody have any good recommendations for a set of flat pedals?

My personal favourites are composite nylon Nukeproof Electron/Neutron pedals. Lots of colour choices, very durable, grippy and a great price, (£30 ish) even cheaper when they're on sale.

Might not be exactly what you're after but well worth a look.

Would put that around £53.

OneUps are what I’m using and I like ‘em.
Not sure about the exchange rate… they’re $59 USD.

I am always smashing my pedals into rocks, so I get cheap composite pedals. I like Raceface Chesters, or these knock-offs: https://www.amazon.com/FOOKER-Composite-Mountain-High-Strength-Bikesflat/dp/B08Y5L5FDC?th=1

I have no idea why people pay a lot for expensive pedals. Fiveten shoes stick to the pins of cheap pedals as well as fancy ones.
I got some OneUp composites as a temporary replacement for my Tmacs when I had to service them. I ended up keeping the OneUps. Great pedals!
Not sure on pricing across the pond there.

But also check out the CrankBrothers Stamp 1, and Deity Deftrap. Both of those are around $50-55 USD, although I've seen the Stamp 1 as low as $35 at times when it is on sale.
DMR v11. Have a pair on order. Taking the Vaults off my fat bike and moving them to my new trail bike.

Shimano GR500 are under £50 most places. Currently doing first off road bike build in years, so can't comment aside from assuming they should have the usual Shimano pedal quality.
I have Chesters and they've been great. I have One Up alloys on my main bike and they're amazing. The best thing about One Up pedals is the pin heads are countersunk into the pedal. So when you go to change them, no damaged bolt heads and getting them out is much easier.

Deity Deftraps.

Large platform that feel even longer due to the un-beveled edges (they extend farther back from the axle then beveled pedals). Slightly concave with no axle bulges sticking up in the middle. It is a toss up for me whether I like these or my TMACs (which are 3x the price) better.

Been using CHesters for years with good enough results. Just bought some DMR Vault's (metal) and I like them more, but cost more too.
I just put a pair of aluminium Boardmann flat pedals on my bike. Got them in Halfords, seem good quality.
