Crank brothers seems to work ok. For fatties use high volume not high pressure to fill them up.

What brand/style of pump do you carry on winter rides? Any that should be avoided?

keep it warm
just about any pump will work if you keep it warm, so a smaller one like the Crank Bros is good cause it's easy to stash in my pocket when the temps drop.
If you can't keep it warm, use a pump with a metal head to keep from snapping off in cold temps.
Your best bet if you're riding at 20 above or colder is to just keep it warm.
