First time replacing a rear derailleur. Do I break the chain or remove one of the jockey wheels to get the chain off then on, with the new derailleur?

Breaking the chain does not weaken it ,as long as you don't break it in the same spot twice
Break it and use a power link or one of the many variants.

Yep, this.
yep, this again...break it and replace it with a KMC type link...the Park tool also makes it a bunch easier. You can see the installed link a couple links to the left of the derailleur. You also can use them over again if you need to and there is no degradation in strength. It's pretty much a perfect world :thumbsup:
