Spaghetti is a good choice. I like to go light on the tomatoe sauce though, and sometimes I just eat the noodles with a little light butter. Generally, I try to eat about 2.5-3 hours before I ride, that way things have digested properly. For me, eating and then immediately going riding is a no no... I feel like crap.
I always eat a few plates of spaghetti the night before a race or big ride. I never eat anything right before I ride though, besides maybe a cliff bar. I don’t like that full feeling while riding hard. Potatoes are a good source of cards too.
