S himano DX hubs only worked with 7-speed casettes, correct? Is it possible to modify them to work with an 8-speed casette? Can I replace the freehub body with an 8-speed model? What all would be involved and is it possible?

I think the only thing you would need to do is rearrange the spacers on the axle.

Oh, and yes you would heed a new freehub body.

Agree. A replacement 8-speed body should be an option.

Yes you can

I have a set of DX hubs and converted it from 7sp to 8sp, many years ago now. A shimano 8sp freehub is a bolt on swap, some axle respacing and redishing of the wheel(if it's a built up wheel) will also be required.
