Do you get a lot of sidewall slicing/gashes for you riders in the St. George area?
Should I throw on a tire with extra sidewall protection?

Depends on what you plan on riding. If you're running a tire known for having weak sidewalls, then you might be happy trying a wider, high volume tire with beefy sidewall. Otherwise, I say ride what ya got. It is rocky here, but no more than anywhere else in the southwest.
