I've had adjustable height forks, and quite honestly, I've never used that feature even when I had it.
If not having this feature (or any feature) prevents me from climbing, even in granny, then it's obvious that I need to go out and ride more, cause I'm obviously out of shape.
I have 160mm spring/oil up front and I'll climb anything, or die trying. Of course, I've been known to get off and walk in the event of the occasional cramp.
